I think the emails are only visible to the owner of the item, and the administrators . Regular users should not see those at all.. you could try this out by logging out from your account, and then viewing the same items again.

on the other hand, the uploader's email is stored in item's metadata, even if it is not visible on the item page. so if you really don't want people to see your e-mail, you should use some other e-mail as your login. see http://www.archive.org/about/faqs.php#77

This is correct - if you are not logged in, your email doesn't appear on your item page. However, it does appear buried in the XML data. I don't _think_ people will be spam harvesting based on the XML, but I guess you never know.
